Coconut Sugar

What is coconut sugar? I wonder how coconut sugar tastes like since this my first time to hear about this product. My friend explained that his family from the Philippines went to a seminar to learn how to process coconut nectar into sugar and send some for him to taste. Being hospitable as Filipinos do, he shared with us the blessing of receiving the coconut sugar to try and compare. It looks reddish maroon and very fine. The smell is so aromatic and boy, it was sweet and melts easy on my tongue. This is the sugar I loved, the ordinary sugar. He said that it takes two people to do the process because there is no stopping upon starting the process of stirring coconut juice until it forms into sugar. And it is a good start for small farmers who want to expand their expertise with coconut. I found out that coconut sugar is becoming a substitute for other fancy sugars such as sweeteners.
